Hiya,

So I'm a huge fan of the keto lifestyle. I've been on and off it for a while now. It basically is a Low carb, high fat lifestyle. That means no rice, potatoes, yams, garri etc while you eat a lot of healthy fats like coconut oil,  butter (not margarine) real butters like Kerrygold, Lurpark, Presidente etc.

I love cooking so I enjoy the process of trying out new things. I've always craved these breakfast muffins but never really gotten round to making them. So this morning I decided I was going to make them and I have to admit they were absolutely amazing. I had 3 and I can't wait to have them for  breakfast tomorrow.




Ingredients
5 eggs
Full cream
Spinach
Seasoning ( I used a brand called Adobo & dry pepper)
Bacon
Pork sausage
Spring onion, onion, green pepper, yellow pepper
Half a tomatoe

Directions
1. Fry the bacon and then brown the pork sausage and mash. Chop the bacon into little pieces. Set aside
2. Stir fry the vegetables (these Vegas actually have carbs in them so use as little as possible)
3. Stir fry the spinach too.
4. Combine all above
5. Whisk the eggs together and add to the sausage/veg/bacon mixture
6. Add some cream and grate some cheese in there.
7. get your muffin tray and put the mixture in.
8. Dice your tomatoes in little cubes and place one in each tray. You could also use whole cherry tomatoes but they are solo expensive.
9. Oven should be preheated, bake at 170 degrees for about 20 - 30 mins.

Serve as desired. Store by putting in a ziplock bag and keeping in the fridge.

It tasted amazing - pop them into the microwave whenever you want to have them.
Total carb content of the entire batch - less than 6g. For each muffin 6g 0.5g carb. The beautiful thing about this is you could probably try with different veggies - cabbages, cauliflower, zucchini etc.

PS: a cup of garri contains about 75g of carbohydrate lool!
